The weather has been chilly and rainy and the sky is gray again! While I was in Target buying Pampers, I saw these rainbow cups and straws and decided to make my own rainbows of color for today’s after school snack. This idea took less than 10 min to assemble! Simply pour the Lemonade (you can make your own or buy it ready made) into the cups while toasting the waffles in your toaster. Melt chocolate chips in a glass measuring cup in microwave. Slice waffles any way you want & dip in chocolate & then sprinkles! There you go! Hope you have fun making your own rainbows of fun & happiness no matter what the weather!
I love taking basic ideas and adding just a little creativity to them. And since my husband always complains that I bake for everybody and feed him nothing but the leftover imperfections, I decided today was his lucky day. Ok, well the truth is, I really was baking the cookies for the children for an after school snack but I screwed up the recipe and had to double it so I could even out the overdose of one of the ingredients…but he doesn’t have to know that!!
So, since I had more chocolate chip cookies than I had planned and my husband loves cookies, or any dessert for that matter, I decided to make the abundance of cookies look a little festive. Instead of just dumping the cookies in a ziploc and storing them, I displayed them on a cake stand, poured 2 glasses of wine, cut a few flowers from my garden…which is rapidly growing thanks to the 40 days of rain it feels like we have been having…and poof…a creative little display for when he came home at 8:30pm.
I have not given my blog the attention it deserves, but when I was in my garden and saw my mint growing, I was inspired to get back to work. My mint is just in time for the Kentucky Derby and Mint Juleps. If you are not a mint julep or bourbon fan, no worries! Just make your favorite drink, add a sprig of mint and name it after your favorite race horse of choice!
